We serve our Kalamata Aioli alongside our housemade french fries, but it also makes an excellent dip for a veggie platter or slathered on a slice of crispy toasted bread for crostini.

Grilled Shrimp, Corn and Polenta Salad Recipe with Creamy Roasted Garlic Dressing and Parmesan Crisps | What’s Cooking

Grilled shrimp salad with sweet corn, polenta, creamy roasted garlic dressing and Parmesan crisps from Nordstrom. | Photo by Jeff Powell

Succulent grilled shrimp. Seasonal at-their-peak ingredients. Herby, roasted garlic dressing and a nutty Parmesan crisp garnish. Combine them all, and meet the perfect summer lunch or dinner.

Ripe, red tomatoes and freshly picked sweet corn (especially grilled) are two of my favorite summer ingredients. I look forward to them all year, since they aren’t much worth bothering with any other time. So, when I saw this recipe, I had a pretty good feeling we’d be good friends.

Peppery baby arugula makes a delicious bed for all these flavorful salad components, including the grilled polenta croutons. And, with fresh herbs, garlic, scallions, a dash of mayo and the perfect amount of acid and sweetness, our light but creamy dressing that tops it all deliciously straddles the line between ranch and green goddess dressing. Substantial but not too heavy, this salad (also served at our Marketplace Café) has everything going for it. File this recipe under “Going to make again and again”.

Dark Cherry Crisp Recipe with Fresh Summer Cherries | What’s Cooking

Dark Cherry Crisp Recipe with Fresh Summer Cherries from Nordstrom. Photo by Jeff Powell.

Crisps and cobblers are a simple dessert to throw together, but they still taste like you did a lot of work. We’ve shared our Maple Apple Cobbler, but this recipe for an easy cherry crisp takes advantage of the bounty of summer cherries that are coming into season. In our from-scratch version, sweet cherries get quickly simmered to preserve their texture along with ginger and lemon and apple juices to brighten and highlight the cherry flavor. Topped by a generous layer of old-fashioned rolled oats, butter and pie spices, our crumbly streusel provides the perfect textural foil once crisped in the oven to those softened but still plump cherries.

Fresh, Homemade Sparkling Hibiscus Lemonade Party Punch Recipe | What’s Cooking

Party punch idea: Sparkling Hibiscus Lemonade from Nordstrom. A fresh, homemade lemonade from real lemons with hibiscus tea concentrate and club soda. Recipe from Nordstrom; photo by Jeff Powell.

Our recipe for freshly squeezed homemade lemonade—with the perfect tart-to-sweet balance—gets friendly with the concentrated flavors of tropical hibiscus for a refreshing summer party drink that effervesces with a top-off of club soda. (Though we won’t tell if you swap out the club soda for champagne, or tip in a bit of quality vodka to take this kid-friendly party punch into adults-only territory.)

Like with our recipe for Sparkling Pomegranate Lemonade, this makes two gallons for a big crowd. You can halve the recipe for a smaller gathering, or, as I did, use up any extra to make a super-delicious granita in your freezer—a dessert perfectly suited for a warm summer night.

Roasted Cauliflower Agrodolce Recipe with Raisin-Sherry Butter and Parmesan Cheese | What’s Cooking

Since making this roasted-cauliflower recipe two weeks ago for The Thread, I’ve already made it again for a dinner party. This dish—served at our Bazille restaurants—elevates a humble brassica to a whole new level of delicious. The sherry-raisin butter is sweet and pleasantly sour with the addition of a mild but refined good, aged sherry—and would be equally delicious as a spread for crostini, or anywhere you’d want a flavorful compound butter. Parmesan cheese and herby breadcrumbs add a nuttiness and textural freshness that make this side dish even more inviting. And then there’s my favorite, the fried capers. While it may seem an unnecessary extra step, shallow frying half of the capers makes them tiny, crunchy salt bombs, which adds a quick-to-achieve pro finesse—especially nice if you’re entertaining.

Lemon Risotto with Grilled Shrimp and Asparagus Recipe | What’s Cooking

Shrimp and asparagus risotto recipe grilled with lemon from Nordstrom. Photo by Jeff Powell.

You don’t need to be a chef to make risotto. Seriously. Especially with this easy shrimp and asparagus version. The preparation isn’t the only thing that’s simple. Fresh shrimp and asparagus get dressed with just a bit of olive oil, salt and pepper and are then grilled for a smoky flavor that still lets the essence of the briny shrimp and crisp-tender asparagus shine through. This creamy risotto also includes a good bit of freshly squeezed lemon juice, which pairs beautifully with both stars of the dish. Add friends, a warm summer night and a glass of great wine, and you couldn’t ask for anything better.

In case you missed it, you can also make risotto in advance for less stressful entertaining. Just follow the method described in our Make-Ahead Risotto Recipe.

Best From-Scratch Lemon Ricotta Cookies Recipe with Icing | What’s Cooking

Best from-scratch lemon ricotta cookies recipe from Nordstrom. Photo by Jeff Powell.

I love lemons. Seriously. I even wrote a poem about them in a college poetry writing class. (Don’t worry, I’m not going to share it here.) So, when I saw this Nordstrom Lemon Ricotta Cookies recipe in our Family Table Cookbook, I was into it. Real into it.  Then I read the recipe and saw it called for the zest of six lemons in the dough–plus more for sprinkling on top. All that bright lemon flavor packed into a cookie? I got excited. Then I made them, and now I’m hooked.

Lemon zest

Closer in texture and tenderness to a cake than a cookie, these moist and almost cheesecake-y lemon ricotta cookies are perfect little winners. The tablespoon of salt seemed like a lot, but it adds just a trace of savoriness (think salted caramel)—the perfect foil to all that citrusy sugariness. Bonus: our recipe requires portioning and freezing the dough, which will keep for weeks in the freezer and be ready whenever the mood for a ridiculously good, soft lemon cookie strikes.

Once you’re ready to bake, be careful not to leave the frozen dough out to thaw too long, as I did. The cookies ended up pooling together slightly, which looked a bit of a mess, though they were still delicious! I actually baked a second batch without waiting at all for them to defrost, and they turned out beautifully with a few additional minutes in the oven.

Throw a Kentucky Derby Party with Our Recipes and Style Inspiration

How to throw a Kentucky Derby party with recipes and style inspiration from Nordstrom.

One day each year, folks dress in their spring finery and head to the racetrack. Or, for about two minutes, some with otherwise no interest in equine affairs turn to their televisions. Mint juleps are poured. Bets are placed. Rapt eyes focus on Louisville, Kentucky, where for over a century 20 of the most beautiful and athletic horses in the world compete in the first of three races that form the Triple Crown.

“The Run for the Roses”—or the Kentucky Derby—is one of our enduring national pastimes. Although originally modeled after the English Epsom Derby, it has become distinctly American. Southern style, food and customs pervade the event and the many events surrounding the main one. But just as the race’s founders took liberties with the equestrian traditions of Europe, many households and barrooms throw alternative versions of the party on the lawn at Churchill Downs.

Since the sporting life is as good a reason as any to rally around delicious food and drink, we invited some of our favorite Nordstrom people over for a Kentucky Derby party. Our menu included snack variations on traditional Southern foods, some strong cocktails and plenty of horsing around in front of the camera in candy-colored clothes. Since the main event usually takes just minutes, there’s ample time to catch up with each other and enjoy a pleasant, lazy afternoon that can easily drift from a casual cocktail hour into a light dinner.

The Kentucky Derby is Saturday, May 7. Undercard races begin at noon ET and the main event is at 4pm ET.
