When you’re a serious restaurateur in Chicago and it’s time to trick out your menu’s dessert section, you call James Beard Award-winning pastry chef and cookie master Mindy Segal. She influences the whole city with her legendary shop, HotChocolate. And rumor has it she’s about to change the medibles game, with medical marijuana legal in Illinois.

The term “badass chef” gets thrown around a lot, but we think you will agree it applies to Chef Katherine Clapner. She cycles 100 miles per week, runs a chocolate-focused mini empire called Dude, Sweet Chocolate in Dallas with zero frills and the highest-quality ingredients–and also happens to influence the national dessert scene as the designer of the sweets menu at P.F. Chang’s.

Below she expounds on favorite fruits, 1970s rock ‘n’ roll and provides a recipe for a severely delicious smoky-savory-slightly-sweet torte.

Farm-to-taco is the concept of Chaia, the restaurant run by chefs and close friends Suzanne Simon & Bettina Stern, who began their business as a farmers’ market stall and still maintain a uniquely close relationship with growers at their brick-and-mortar restaurant, where the veggie tacos are famous and several wines flow on tap.

Chef Kati Lauffer is a boss, frankly, ruling all Nordstrom restaurants in the western United States and Canada for the past eight years. In a giving mood, she hooked us up with two exclusive recipes: a smoky beet and lentil salad and perfect Korean-style tacos. We are grateful.

In case you ever meet her and want to buy her a gift to say thanks, she mentioned to us that she enjoys food made from pigs and ducks–especially when accompanied by a really good pinot noir.
